
I was so inspired by the savory nori tuiles over at
Cafe Nilson, that I immediately had to try a sweet version. I made the tuiles, using the same recipe in
this post with a few tablespoons of black cocoa powder for color (
King Arthur sells it). I filled them with rice pudding and used a piece of blood orange as "tuna" and some pomegranate seeds as "salmon roe".

I love them! I too felt it necessary to remake tuiles looking like food they're not. For me it was tacos :) Great job on the challenge.
